TASTING
This olive oil from the Los Cerros de Úbeda area, made from the picual variety, has a mild flavor with certain notes of bitterness and spiciness. It is one of the most stable varieties with a higher proportion of oleic acid known, which gives it nobility and flavor. Its stability makes it very resistant to rancidity.
PAIRING
The color and flavor of this EVOO is achieved by keeping it away from light for as long as possible before consumption. Through this technique, we preserve its properties better. This would not happen with long distribution channels and premature packaging of the product.
Recommended for daily use in our kitchen for dressings, frying, preserving, or confit. Ideal for cooking and dishes where the flavor of the oil stands out. Its performance is much higher than other vegetable fats, cold or hot, as less quantity is needed due to the intensity of its raw aroma and it expands in volume when heated, retaining its dietary properties better than other fats.
