Lettuce is one of the most popular vegetables in our diet and stands out for its use as an ingredient in salads. The most well-known varieties of lettuce are:

• Iceberg: compact head with round and crunchy leaves, grown in the Campo de Cartagena, Valle del Guadalentín, Águilas, and Alicante.
• Little gem or baby lettuce
• Curly leaf: loose or separated leaves.
• Romaine: elongated leaves with entire edges and a wide central vein, or Miniromaine, which is smaller in size.
• Stem or asparagus lettuce: leaves with an unpleasant taste.
• Simpson-Roble: with black and dark seeds.

The leaves contain a lot of fiber, properties against anemia and weakness; they are also diuretic, help with sleep, and cure mild bronchitis. Additionally, they contain vitamin A, in greener leaves, and potassium, making them have antioxidant properties.
