100% Garnacha
Vineyard: Located in Ejea de los Caballeros, on top of a reservoir, at about 400 meters above sea level, ventilated by the intense cierzo wind that characterizes our region.
Harvest: Mechanical harvesting and night harvest. In our Winery, we use the technique of Night Harvest to better preserve the aromas and flavors of our grapes.
Production: Pre-fermentative cold maceration between 6 and 9ºC, allows to mark the fermentation times. After destemming, a slight pressure from the crusher releases only the free-run juice, which finishes its fermentation between 25 and 28ºC.
Aging: 4 months in French oak barrels and at least 8 months of bottle aging.
Alcohol content: 14% vol.
