Olivares de Altomira
Olivares de Altomira was created with the purpose of restoring old olive groves in Vellisca and transforming them into an artisanal extra virgin olive oil (EVOO), crafted with attention to every detail, from the tree to the bottle. Each season begins in the fields, with the olive harvest and its immediate transfer to the mill to preserve all the quality, aromas, and character of the oil. Beyond production, the project also promotes olive oil culture through oleotourism experiences and the marketing of a premium product that highlights the value of the land, tradition, and care at every stage of the process.

As Paki Cruz, the company’s master cheesemaker, explains to us, cheese begins, so to speak, with the livestock, starting with the milking. Come meet our cheese producers.

Behind every tradition, there is a story, and behind every Miguelito… there is one too. The story of Miguelitos Ruiz begins in the heart of La Roda (Albacete) over seven decades ago, in a small pastry shop where the passion for baking and innovation blended with the aroma of freshly made puff pastry.
