Production and aging
Ànima Negra ÀN/2 is made from the grape varieties Callet, Mantonegre, Fogoneu, and Syrah. The vineyards from which they come have been planted for 50 years, with soil rich in ferric oxide and a gravelly subsoil. The climate of the area is Mediterranean.
The grapes are manually selected in 10-kilogram boxes. Fermentation takes place at a temperature of 28ºC in stainless steel tanks. Maceration lasts between 17 and 25 days. Malolactic fermentation takes place in stainless steel tanks.
The aging process lasts 12 months in French oak barrels (70%) and American oak barrels (30%). 35% of the barrels are new, while the rest have been used for a maximum of three wines.
Tasting notes of Ànima Negra ÀN/2
- Appearance: Ànima Negra ÀN/2 has a red color with a violet rim.
- Nose: Aromas of red and black fruits, with notes of wild flowers and toast.
- Palate: Intense, flavorful, and full-bodied, with a fragrant finish.
Pairing
It is ideal to accompany red meats, poultry, game, cured meats, and semi-cured cheeses.
It is recommended to serve at a temperature between 16 and 17ºC.
