Antídoto is the project of Bertrand Sourdais, who has worked on great wines in France such as Château Léoville-Las Cases or Mouton Rothschild.
Antídoto is a single-varietal wine made from Tempranillo grapes. The harvest is done naturally. The pre-fermentation process lasts for 3 days at a temperature of 12ºC. The fermentation process lasts for 6 days at a temperature of 25ºC.
Finally, the aging takes place in semi-new French oak barrels for 12 months.
Antídoto is ideal to accompany pork, pasta, and duck.
It is recommended to serve at a temperature between 14-16ºC.
