Seeking a balance between the potential linked to climatic conditions and the freshness linked to altitude. Without expecting an onset of overripeness, using French oak barrels of 600 liters, and preserving acidity through blocking malolactic fermentation.
Selection of White Grenache. Grapes from slate terroirs at high altitude (890 m). Vinification with natural yeasts. Fermentation and aging on lees in French oak barrel 600 l with “bâtonnages”. Minimum 12 months. Selected natural cork stopper.
