You just matched with this cheese, right? Let us introduce you to the incomparable aged goat cheese from Collados Quesería. It is made with pasteurized milk from Granada goats, raised in the region of Huesca, at the foot of the Sierra de la Sagra.
The goats are happy and raised in freedom, and we find nuances of rosemary, thyme, lavender, rockrose, and other shrubby species from the Sierra Norte Granadina in both the milk and the cheese. Starting from this natural raw material, we make the cheese through a traditional process in which we only add goat rennet and salt.
