The asparagus tips covered by the protected geographical indication "asparagus from Navarra" have a white coloration, soft texture, with minimal or no fibrousness, and a perfect balance in the smoothness of their bitterness on the palate, primarily due to the cold nights in the production area and the quality of the waters and cultivation systems used in their production.
The white asparagus from these lands are cultivated following a costly and complex production process, as they must grow underground without exposure to sunlight.
Hand-peeled and artisanally processed on the day of harvest, they retain all their original properties, allowing enjoyment of them throughout the year.
