Lavender raw honey is a favorite of many due to its pleasant warm, delicate, and persistent flavor.
It is a pure flower honey from a very light and pleasant herb, leaving a warm taste. Bees obtain it from lavender bushes, unlike tree sap honey, which is often dark and strong in flavor, lavender honey is softer and lighter.
The lavender plant is a perennial herbaceous shrub, also known as lavender. It tends to be short-lived and has a large number of varieties in its genus. The plant is used as an essential oil in aromatherapy.
The lavender plant is composed of about sixty species (lavender, espliego or cantueso among others) constituting a plant that is endemic to the European Mediterranean region, where it is often seen growing wild. It is cultivated both for its medicinal properties and for its ornamental and aromatic value in gardens.
The main constituent of lavender is linalool, in a free state, from 30% to 40% and in the form of a compound in acetic, butyric, valerianic, and caproic acids. The presence of linolenol, alpha-pinene, caryophyllene, geraniol, nerol, and cineole, esters in small proportion is also confirmed. It has an abundance of esters and a lack of alkanol. Due to all its compounds, the plant is attributed with relaxing, calming, and digestive processes favoring uses.
Raw honey is different from processed honey, raw honey means that the honey is packaged from the hive to the jar with minimal interference.
Most industrial honey is highly processed to always look the same and attractive, as a result of these processes and pasteurization carried out by many producers, enzymes, pollens, and most of the honey's properties are lost. The raw honey we harvest subtly varies in some of its nuances like the color from one batch to another, so you may perceive some variations from one season to another, due to rainfall, temperatures during flowering.
Keep in mind that raw honey crystallizes and this is a natural process that mainly occurs due to the natural glucose in raw honey.
Among the common uses of lavender honey, it is highly appreciated in gastronomy for baking meats, bread, salad dressing, infusions, and pastries.

The crystallization process is natural in raw honey, it is a process by which honey hardens. You can consume it perfectly in that state, but if you wanted to reverse that state, simply place it in a water bath for a few minutes, making sure not to exceed 40º.
