This is a pure citrus flower honey with a very pleasant taste and a gentle touch of orange. It comes from bees that feed on the flowers of Mediterranean orange and lemon trees, with flowering starting at the end of March and ending in early May. Unlike tree honey that comes from sap, these varieties of flower honey are much lighter in taste and color and tend to crystallize faster due to higher levels of glucose.
We harvest this variety of raw orange blossom honey at the end of April and beginning of May in the regions of Murcia and Valencia.
What about the tree where the honey comes from? The orange and lemon tree flower known as orange blossom is a beautiful citrus tree that produces fruits, with dazzling white flowers when it blooms.
Orange blossom comes from the Arabic word meaning white flower. Characteristic flowering of orange trees, lemon trees, and citron. To preserve its properties, harvesting should be done in spring. It is a tree that is cultivated in warm climate areas and its fruits bloom at the end of autumn and mainly in winter. However, when it is in full bloom, it is usually between March and April. In addition to its beauty, orange blossom is characterized by its intoxicating aroma, widely used in aromatherapy and cosmetics. Raw honey is different from processed honey, raw honey means that the honey is packaged from the hive to the jar with minimal interference. Most industrial honey is highly processed to always look the same and attractive, as a result of these processes and pasteurization carried out by many producers, enzymes, pollens, and most of the honey's properties are lost.
The raw honey we harvest subtly varies in some of its nuances like color from one batch to another, so you may perceive some variations from one season to another, due to rainfall, temperatures during flowering. It comes from fields in the regions of Murcia and Valencia, areas where orange and lemon fields mainly thrive.

The crystallization process is natural in raw honey, it is a process by which honey hardens. You can consume it perfectly in that state, but if you wanted to reverse that state, simply place it in a water bath for a few minutes, making sure not to exceed 40º.
