The grapes come from the vineyards owned by the winery in the municipality of Grávalos, south of Monte Yerga in the foothills of the Iberian Mountains at an altitude between 700 - 800 meters above sea level. A very high area where fresh wines with low alcohol content are obtained, with very fine and elegant aromas. The Viura variety is harvested in the first two weeks of October. The grapes are harvested by hand, selecting the grapes, avoiding any grapes that have deteriorated or do not meet the quality required to produce our cavas
Only the free-run juice obtained by gentle pressing will be used to make our cavas. The must will undergo the first fermentation in stainless steel tanks at a low temperature of 14ºC. At the beginning of spring, once the wine is clean, it will undergo the second fermentation in the bottle and will remain aged for at least 24 months
Lemon yellow color with steely reflections. Fine bubble that forms a small rosary of slow evolution. Good intensity, aromas of apple, pears and almond. Sweetness with a touch of acidity that brings freshness
Patés and blue cheeses. Nougat and all kinds of desserts
