Extra Virgin Olive Oil
Description: This extra virgin olive oil of low acidity and cold extracted, is an exclusive product that stands out for its high quality due to the careful process of harvesting and processing, as well as for being a single variety of the Royal variety, (native to the D.O. Sierra de Cazorla) highly valued for its unique organoleptic characteristics. Harvesting takes place during the first fortnight of November when the olives are in "veraison". The fruit is obtained from olive trees mostly centenarians and of low productivity. Due to the orography of the terrain and the characteristic "woodiness" of this olive tree, it is particularly sensitive to the new mechanised harvesting methods, which is why it is usually harvested by hand. On the other hand, the production of this olive juice is very limited as a result of the increasing scarcity of this variety of olive tree native to the area.
Tasting: It presents a great olfactory complexity with an intense fresh fruity of green olive, great mixture of herbaceous and fruity aromas, highlighting among all of them the green banana, almond and vanilla. Medium-low bitterness and pungency.
