Soto Marañón is an extra virgin olive oil (EVOO). Its early harvest usually takes place in early October, in a single day. Once in the mill, the oil is produced through cold extraction. Packaged in 50 cl bottles whose image seeks to define the personality of its producers.
Finca el Portillo, located near the old train station of Alcaudete (Jaén), is a small family estate of centuries-old olive trees of a variety almost in extinction, it is the commitment of José Vicente Rodríguez, to produce a high quality oil of Carrasqueño variety.

A privileged terroir for its unique properties. Its calcium and sulfate-rich structure give this oil a unique character. Bright green oil, with fruity, tomato bush and almond notes on the palate.
The Carrasqueña olive is known for its low productivity and exceptional characteristics, making it a unique variety. The low productivity of the "Carrasqueño olive trees" is causing their uprooting, a concern for José V. Rodríguez, the producer of Soto Marañón oils.
A journey of José V. Rodriguez with winemaker Álvaro Palacios led to a conversation in which the producer conveyed the fear of seeing this unique variety extinguished, which was being replaced by more popular varieties such as Picual. Álvaro advised him to bet on this variety, at which point the producer seriously considered undertaking a project that would place the Carrasqueña variety where it deserves. Bertrand Sourdais (winemaker at Antídoto wineries) "gave the final push," analyzing the properties of the land, at which point the great potential of the estate was verified, thus beginning the first vintage of Soto Marañón oils in 2011.
A very peculiar variety, popularly known as "the bird's olive," as birds are the first to "peck" due to its sweetness.
Ideal for use in the preparation of sauces, emulsions and pickles, to accompany fish, pasta, cheese, yogurt, chocolate... Suitable for preserving raw foods. Perfect for making mayonnaise, to accompany white fish, to use in pastries, for toast with honey, unique with yogurt, nuts and for a fruit and vegetable salad.
