Elaboration and aging
After malolactic fermentation, the wine must was introduced into French oak barrels to remain in them for a minimum of 4 months. The barrels have an age range between zero and three years, with 25% of new barrels. The fermentation temperature was around 28°C.
Tasting note of Cueva del Chamán 2021
- Appearance: Clean in visual phase, with a purple-red color and high color intensity.
- Nose: Clear hints of strawberry yogurt, raspberry, and a background of banana typical of carbonic maceration.
- Palate: Sweet and fresh on entry, balanced with a medium persistence. Easy to drink with a pronounced fruity character.
Pairing
Ideal for accompanying rice dishes, meats, game, and aged cheeses.
It is recommended to consume this red wine at a temperature of 16°C.
