The Ethiopian Specialty Coffee is simply unique and natural because, according to them, its genetic legacy has remained intact over the centuries, making Ethiopia a mostly organic coffee producer (95% of production is in "Garden Coffee" and "Forest Coffee" and only the remaining 5% in plantations). There are very marked differences in the coffees of each geographical region of Ethiopia. The western part of the country accounts for about 46% of Ethiopia's coffee production, in which the Djmmah region is located.
Limu, as well as the largest area within Djmmah, is a coffee variety unknown to many, whose flavor is very different from the Djmmah coffee variety, appreciated primarily for its high acidity. The potential in quality is enormous and some of these beans, such as those of the Limú variety, have great attributes that are not found in other countries.
