Ivory and yellowish surface color. The texture is firm, consistent, and hard.
Brown, hard, and with a well-defined plait pattern. Not edible.
From 4ºC to 8ºC in the refrigerator. Always cover the cut with aluminum foil. In the event of mold appearing on some parts, remove the rind or cut and consume as usual. Mold is a natural part of the aging process of Manchego cheese.
