Oro del Desierto Hojiblanca 500ml is an organic extra virgin olive oil of limited production, made with Hojiblanca olives harvested at early veraison in the "El Vicario" estate, located in the Desierto de Tabernas (Almería). The olive grove is between 20 and 30 years old, planted in 7 x 7 m frames, with deficit drip irrigation on calcareous soils on the borders of the estate.

Processing

  • Picking: from the end of October to mid-November.
  • Cold extraction:, 2 phases, only with very early ripening olives (60-70% green).
  • Variety: Hojiblanca.
  • Zone: Finca El Vicario, Desierto de Tabernas (Almería).

Tasting

  • Colour/Appearance: Intense golden, filtered and clean.
  • Perfume/Bouquet: powerful and broad, with notes of medium-ripe tomato, green apple and banana, complemented by hints of black pepper, sage, mint and basil.
  • Flavour/Tangy mouthfeel: smooth and enveloping, with vegetal notes of lettuce and almonds. Balanced bitterness and spiciness, spiciness present but late and not persistent.

Outstanding properties

The Hojiblanca variety shows medium stability, and thanks to early harvesting, this oil maintains a longer shelf life than usual. Its polyphenol content ranges between 450 and 700 mg/kg, providing character and potency in flavour.

Food pairing

Perfect for green salads, toasts, fresh cheese, meat sauces, cold soups, salmorejo or white garlic. Always raw or at low temperature in order to enjoy its organoleptic qualities
