Don Zoilo Oloroso is a sherry wine produced by Williams & Humbert with the Palomino variety.
Must from yolks, controlled fermentation at 28ºC. Fortification with alcohol distilled from wine up to 19º, over-fermentation of Palomino awaiting entry into the Criaderas and Soleras system, ageing and physical-chemical ageing by oxidation for an average minimum of 15 years, resulting in this unique dry Oloroso.
Bright amber-coloured wine with a very intense aroma, as its type indicates, reminiscent of dried fruits and nuts. On the palate, dry, slightly acidic, full-bodied, with velvety tannins, it is full and harmonious. Very persistent aftertaste.
