HARVEST

Crystallization occurs at sunset due to the cooling of the brine, promoting the crystallization of small crystals rich in magnesium and potassium, which remain on the surface forming a thin membrane of tiny salt crystals.

Flower of salt is collected manually and does not go through any industrial process. Harvesting takes place every day when ideal weather conditions for production occur, sunny day, high temperature, and little wind. If the grains were not harvested, they would sink to the bottom of the pool once crystallized and lose their properties. For harvesting, a special shovel called "lousse" is used. It is left to dry in the sun and wind to obtain a pure product, without additives but with very limited production. No matter how much time passes, it does not clump together and maintains its properties intact.
