Some archaeologists date the pickling method to ancient Mesopotamia (2400 BC). Pickles are mentioned twice in the Bible (Numbers 11:5 and Isaiah 1:8), and Aristotle himself in 350 BC preached the healing properties of pickles. Gherkins were even given to Julius Caesar's troops in order to improve their physical and spiritual capabilities.
Every man has his own recipe. Or his recipe. And it is that until recently in every house there was a unique way to prepare table olives before going to the pantry and waiting their turn to accompany the Sunday vermouth or a fresh beer.
It was usually the most senior person in the family who would get the olives and the different vegetables and herbs that with the complicity of time would give that special flavor that now we can only relate to good memories at home.
But as in the world of beer, artisanal does not have to be superior. This collection recovers the best recipes from houses with olive oil tradition by the hand of great masters and experts of our era, adapting them to industrial production without losing an iota of authenticity.
