Vines, like people, often reach their peak in the face of adversity. This award-winning, limited-production wine from Priorat comes from the fruit of vineyards between 30 and 90 years old that struggle daily to survive in dense slate soils on steep slopes. Its fruit offers a unique mineral complexity that could not come from anywhere else in the world, and it has done so since the Carthusian monks planted the vine in Priorat in the 12th century.
Fermented at controlled temperature for 19 months in French oak barrels.
Very defined and bright color. Almost opaque, beautiful intense reddish-violet color.
On the nose, fresh and aromatic, with intense notes of fresh fruit and flowers, mainly violets. Also aromatic wild herbs, balsamic and mineralized.
On the palate, aromatic freshness, with concentration of fresh fruit. Fruity texture and fine structure. It is a wide, expressive, and complex wine. Aftertaste, notes of fresh fruit and wild herbs.
Pairings: Any grilled meat, especially beef and lamb. Cooked meats. Best pairing for serrano ham and especially Jabugo. Aged cheeses from any origin such as Parmesan, Manchego, or Cheddar.
