The green soybean or mung bean (Vigna radiata) is a different legume than the common soybean. It is easier to digest than other legumes. It is high in protein (35g/100g) and fiber (22g/100g). Rich in B vitamins, especially folic acid (B9). Rich in minerals such as iron, phosphorus, potassium, copper, calcium, selenium and especially magnesium.

Use:
Soak for a few hours. Change the water and bring to boil. Bring to a boil over high heat for 2 minutes and then simmer for approx. 45 minutes adding a little cold water from time to time. Remove from heat before the skin opens. Can also be used for sprouting.
Storage:
Store in a cool, dry place.
