The soil of the region is not very fertile, but over the years they have improved its condition naturally with hard work incorporating organic matter and amendments; which has allowed the production quality to be excellent and has special characteristics thanks to the altitude of the farm (1,200 meters above sea level) and its peculiar microclimate
