Caracol de Cadalso is a small family microenterprise with a small but high-quality snail production. We are the only sustainable farm in the Community of Madrid and have been producing snails for over 10 years, guaranteeing the quality of the product.
Caracol de Cadalso prepares this recipe with our Petit Gris or medium bover snails (Helix aspersa), highly appreciated in the central area of the Iberian Peninsula. In addition, we use local products for the stew.
This recipe is made in an artisanal way, with special care in cleaning the snails and putting time, dedication, and love into it to ensure excellent results.

Preparation:
