The grapes come from vineyards over 60 years old located in La Seca and Horniros de Eresma. The traditional grazing vines produce around 3,000 kg per hectare. Organic agriculture based on mulching and sulphur tillage, soil management.
Harvesting is done by hand and in 18 kg boxes. The grapes are first selected in the vineyard and then in the winery using sorting tables.
Alcoholic fermentation takes place in 500 and 228 litre French oak barrels with partial malolactic fermentation. It is then aged for 11 months while the wine is in constant contact with the lees.
It has a bright golden colour, a spicy and balsamic aroma (aniseed and eucalyptus), an intense and complex nose accompanied by smoky notes.
In the mouth it is voluminous, fluid and very elegant. The centre of the mouth is powerful and unctuous, with just the right acidity and minerality, and a long, lively finish.
