Spirit distilled from 100% natural cider, exclusively produced in the CASERIA SAN JUAN DEL OBISPO.
The cider is distilled in 3 batteries of 7 stills each. A slow distillation is carried out (below 80ºC) in order to extract the purest and most volatile alcohols and the most genuine and characteristic essential oils (aromas) of the raw material (the cider) and the original fruit (the apple).
From each session (48 hours) the "centres" are selected for the bottle, eau-de-vie around 45º alc., which will rest in stainless steel tanks for at least 6 months.
These selected holandas are homogenized at 41º alc. by adding double distilled water and bottled for consumption.
The whole complex and long process is carried out without the intervention of any substance, or alteration by this or other methods of any of its phases with the aim of producing a product in the line and philosophy of LA CASERIA: 100% natural.
It is packaged in bottles of 0.50 L, which in turn are protected in a cardboard tube properly labeled.
Crystalline, intense aroma, fragrant, fruity (golden apple, cherry and green berries) on a background of fine alcohols. Powerful, dry, warm palate, but with a good weight of fruit well integrated with the alcohol. Hints of green apple skin, oily, ample, excellent balance and length.
