Lemons are selected at different stages of ripeness to achieve the right level of acidity. Unlike most limoncellos, this liqueur, in addition to macerating the lemon peel, has the juice of freshly squeezed lemons added to it one by one and immediately mixed with alcohol so that it does not lose any of its almost 30 antioxidant components such as vitamin C, rutin flavonoids, hesperidin, caffeic acid, ferulic acid, or gamma.
