Lemons are selected at different stages of ripeness to achieve the appropriate level of acidity. Unlike most limoncellos, this liqueur, in addition to macerating the lemon peel, also adds the juice of freshly squeezed lemons one by one and immediately mixes it with alcohol so that it does not lose any of its nearly 30 antioxidant components such as vitamin C, rutin flavonoids, hesperidin, caffeic acid, ferulic acid, or gamma.
