The Llopart Vi·brant is a naturally sparkling rosé wine made from Xarel·lo Vermell, produced with a single fermentation finished in the bottle that generates subtle bubbles naturally and endogenously, preserving its characteristics of minimal intervention. Fermentation with previously selected indigenous yeasts. Wine without added sulfites. Elaboration: Manual harvest and transport to the winery in boxes where the grapes are destemmed and crushed to start maceration at low temperature (8ºC) for 4 hours. Very gentle pressing. Fermentation begins in the tank and when it is almost finished, it is bottled to retain a small part of the carbonic gas produced by the yeasts, which will preserve the characteristics of this minimally intervened wine. The yeasts used, previously selected, are indigenous to the grape itself. Aging with the lees for 5 months, after which they are removed. Tasting notes: Bright salmon color. Its nose combines the freshness of primary aromas of xarel·lo such as pear, with those typical of rosé wines such as fresh strawberry and blackcurrant, on a background of subtle notes of bread crumbs and prominent aromas of undergrowth. In the mouth it is very balanced, with an extremely fine and creamy bubble that perfectly balances the freshness of this wine. Its aftertaste is pleasant and long-lasting. Pairing: It is ideal to accompany seafood, white fish, sushi, or light starters such as bruschettas or cheese boards. It is also excellent with Mediterranean cuisine for its freshness and vibrant acidity.
