Elaboration and aging

Luis Cañas Selección de la Familia is made with the Tempranillo variety (85%) and complemented with other red varieties (15%). Manual harvest in 11-kilogram plastic crates. Double selection on tables: clusters and grains. Destemming. Alcoholic fermentation in 10-hectoliter wooden vats. Malolactic fermentation in new barrels.

Aging for 20 months in new barrels. (50% French and 50% American).

Tasting Notes for Luis Cañas Selección de la Familia

• Appearance: Luis Cañas Selección de la Familia has a high layer cherry red color.
• Nose: Clean nose, with good intensity. Reminiscent of ripe fruit, jam, on a background of fine woods, with a marked balsamic character (eucalyptus, pine).
• Palate: Powerful and dense on the palate, with a structured mouthfeel and good tannins. The finish is broad, complex, long, and persistent.

Pairing

Luis Cañas Selección de la Familia is ideal to accompany roasts, lamb, suckling pig, and big and small game stews. It is recommended to decant before consuming and serve this wine at a temperature between 16 and 18ºC.
