This distillate is made from carefully selected Espadín agave, carefully selected and cooked in conical stone ovens, which gives it a distinctive smoky character. The agave used for Dazantes Añejo is slowly cooked in these wood-fired ovens, imparting deep, complex smoky notes to the mezcal. After cooking, the agave is crushed, usually using a horse-drawn stone mill, before fermenting in open wooden vats using yeasts native to the environment.
This traditional practice ensures a unique and authentic flavor profile. Distillation is carried out in copper stills, which purify the liquid and give it an impressive clarity.
