This wine is special because it is the only sparkling wine in the world made with viogner grapes and champenoise method and only 8000 bottles are produced in total.
The grapes used for its elabooración come from Bodegas Noc own vineyards located in Los Yebenes with an area of 4.8ha. the grapes are harvested by hand so that the grapes arrive at the winery in perfect condition, then the champenoise method is performed with a first fermentation in stainless steel and a second fermentation in the bottle and subsequent aging on the lees. The clarification is manual using old concrete desks and then disgorging.
