The Borges Tawny Decanter Port Wine comes from the prestigious Designation of Origin Demarcated Region of Douro, characterized by its schist soil and the method of cultivation in traditional vineyards arranged in terraces. The average age of these vineyards ranges between 30 and 40 years, bringing a rich complexity to the wine.
This exquisite Tawny is composed of a blend of Touriga-Franca, Touriga-Nacional, Tinta-Barroca, Tinto-Cão, and Tinta-Roriz grape varieties, giving it a variety of flavors and nuances.
The vinification and aging process begins with the careful reception of the grapes, ensuring they arrive at the winery in optimal conditions. After crushing and destemming, the grapes ferment for 3 to 4 days with their skins, regularly submerged by pump-overs to achieve greater color and aroma extraction. The separation of the skins from the must precedes the addition of vinous spirit at 77% v/v, allowing the wine to reach 19% alcohol and contain between 90 and 120 g/l of grape's own reducing sugars.
Aging takes place in small capacity barrels and wooden casks, allowing the aromas and flavors to develop and harmonize over time. This careful aging contributes to the elegance and distinctive complexity of the Borges Tawny Decanter, which usually has a batch with an average age of 6 to 7 years.
