Tahini is a very versatile sesame paste, made with sesame seeds toasted at low temperature and ground very fine. Thanks to the toasting, a better flavor is obtained and the moisture level is greatly reduced, which allows the product to be well preserved. Sesame is known for its high nutritional value: it is a source of proteins, rich in fiber, contains high levels of phosphorus, calcium, magnesium, iron, is also rich in selenium and a source of potassium.
