Tasting notes: Menade Verdejo is a white wine that presents aromas of white fruits on the nose accompanied by herbal notes of fennel, laurel, and thyme. In the mouth, it is tasty, fresh, and balanced with a subtly bitter finish, very varietal. A Verdejo with clear typicity, with a long and elegant finish.
Production:
The average age of the vines is between 20 and 25 years. The soil is clay-limestone and stony with abundant pebbles.
Climate: Continental climate, characterized by very cold winters and very hot summers, with large day/night temperature variations.
There are three different types of harvest: Green (daytime and manual), nighttime, and mechanized. Inertization with dry ice (-80°C) from the moment of harvest until pressing, allowing the wine to be made without any sulfurous additions.
Winemaking: It is carried out in stainless steel tanks with wild yeasts. Controlled temperature between 18 and 22ºC. The tanks have different capacities, allowing the separation of different plots/payments according to the differentiation of soil structures and compositions. Subsequent maturation of the wine on its lees for a controlled period of time.
Bottling: Clarification with bentonite, natural cold stabilization, filtration before bottling.
Pairing: At Made in Spain gourmet, we recommend it with white fish, fresh and mild cured cheeses, seafood pasta, fish rice dishes.
The Vineyard
The key is to combine tradition and technology to pamper the vines. It is about seeking an alliance with the environment to take advantage of the resources it provides, caring for it through traditional cultural practices. At Menade, they replace chemical treatments with other natural techniques, such as plant infusions (nettles, cinnamon...) or whey, which are more respectful of the soil, the vine, and the yeasts. Far from being enemies, the insects that populate the Menade vineyard are faithful allies in pest prevention. First, they are attracted with aromatic extracts to act as predators and then rest in their 'hotels', pollination gardens full of aromatic plants where insects and reptiles live in harmony. The ecosystem of the estates is completed with a series of mobile shrubs and trees to improve the biodiversity that populates the vineyard. A poly-specific garden with more than 40 species from Castile and Leon that is alive all year round welcomes the winery. All these practices have an impact on the final result of the wines, as well as tasting good, they feel good. They produce wines free of allergens and histamines. Through all these mechanisms, Menade has gone beyond the organic label. They are no longer green, they are natural.

The also called Pollination Garden of Bodegas Menade is a large poly-specific garden with native species of Castile and León that is alive all year round, so perennial and caudal species have been used to develop a large floral circuit for all types of insects, seeking a great entomological variety.
The great Insect Hotel contains 40 species representative of the different strata of the ecosystem. At the lower level, at ground level, species with small stems have been planted, aromatic such as lavender, sage, or different types of rosemary.
At the middle level, they have bet on wild roses, red heathers, blackthorns, elderberries, and wild blackberries, among others.
