"Sobremadre" elaboration, which basically consists of fermenting the must with part of the grape skins (up to 25%), while the rest is virgin must. Once fermentation is finished, it is not racked and it macerates with its lees and these grape skins for a maximum of six months (depending on the year, it may vary).
AGING
One month in new American oak barrels.
VISUAL
Bright yellow-green color, with clearly visible traces of carbonic gas that has formed endogenously as a result of the contact of the must with the "mother" (destemmed and crushed grapes).
AROMATIC
Intense bakery aromas mixed with hints of fruit that grow over time.
TASTE
Mouth-filling, unctuousness and glycerin, where it is appreciated that it is not a typical white wine, as the nuances provided by its time in the barrel appear.
PAIRING
Appetizers, cheeses, salads, oily fish, and rice dishes are optimal, not forgetting meats and stews.
