Pimiento del Padrón
The Pimientos del Padrón are small, intensely green, with thin flesh, tasty and some spicy and others not. They are popularly served as a tapa and are a vegetable originating from the town of Padrón in A Coruña (Galicia).

The Padrón peppers are a vegetable with a great number of properties, they prevent aging, inhibit different types of cancer, are rich in antioxidants and lycopene.
They are a vegetable with a great source of vitamin C, containing double the amount compared to oranges. They also provide vitamin A, B vitamins, vitamin E, and folic acid. They also contain minerals such as potassium, phosphorus, calcium, and magnesium.
This vegetable has a very versatile culinary use, they can be eaten raw in salads or as a snack, or cooked in jam, roasted, stuffed, fried, preserved, in stews, as a side dish, and in a variety of dishes.
