Elaboration and aging
Pago de los Capellanes Reserva is a single-varietal Tempranillo wine. After a selected harvest, it is transported in 15-kilogram boxes, and then taken to 20,000-liter tanks for fermentation.
Pre-fermentation cold maceration for 6 days, followed by 20 days of alcoholic fermentation using selected native yeasts from the best vineyards. Malolactic fermentation develops very slowly, with the cellar being kept at 20ºC for 28 days, without the addition of bacteria.
The wine rests for 14 months in new French oak barrels with a fine grain.
Tasting notes for Pago de los Capellanes Reserva
- Appearance: Pago de los Capellanes Reserva has a ruby color with intense garnet tones.
- Nose: It stands out for its delicate complexity with notes of ripe fruit, cherry, currant, and hints of wood with a licorice background.
- Palate: It presents a great balance with a flavorful and succulent passage due to the maturity of its tannins.
Pairing
Pago de los Capellanes Reserva is ideal to accompany suckling pig with roasted potatoes, pochas with lamb, and grilled beef tenderloin.
It is recommended to decant before consuming. Consume this wine at a temperature between 16 and 18ºC.
