White Wine Pazo de San Mauro
This wine is made from 100% Albariño grapes and in the winery Pazo de San Mauro which is located in Condado de Tea, the southernmost and sunniest area of the Rías Baixas Denomination, with an exceptional microclimate of Atlantic influence, which is characterized by mild temperatures and abundant rainfall, in addition to having the necessary hours of optimal sunshine for the grapes from the Pazo de San Mauro vineyards to reach a more complete and earlier ripening. With this, we obtain greater precision and quality in the elaboration of our wines.
In addition, a special feature is the granitic soil of the estate, geologically ancient, which gives the wines their complex and mineral character.
The grapes are harvested by hand, choosing in the vineyard itself the best grapes for our wines. Once the grapes have been brought in, they undergo maceration at low temperature for several hours to extract the maximum amount of aromatic principles.
Over the next 15 days, the wine ferments in stainless steel tanks at 17-18ºC before stabilizing in isothermal vats.
It has an alcohol content of 12.5% vol.
It is recommended to serve at a temperature between 10°C and 12°C.
