The must is fermented separately from the skins by gentle pressing, the fermentation starts with selected yeasts and lasts on average 8-10 days at a temperature of 15°C - 17°C.
Cabert, established in 1960 in Bertiolo, is located in the renowned plain known as "Grave del Friuli". This region of Friuli is currently one of the most outstanding wine-growing areas within Italy's Controlled Designation of Origin. What makes Cabert exceptional is its lineage, as its owners belong to one of the oldest and most revered families in the region. Over the centuries, passion, hard work and a deep dedication to viticulture have forged a valuable cultural heritage that has been passed down from generation to generation.
