Páxaro Tolo is a single-varietal red wine made from Mencía, produced by Eulogio Pomares in the Ribeira Sacra D.O.
The grapes come from vineyards over 50 years old located in Amandi, on the slopes of the Sil Canyons.
After fermentation in 4,000-liter French oak foudres, the wine is aged for 10 months in the same foudres, resulting in a fresh and fragrant wine that reflects its Atlantic origin.
