The vinification of this wine begins with a pre-fermentative cold maceration for 48 hours, allowing for a controlled extraction of color and aromas. Subsequently, the fermentation takes place at a controlled temperature of around 24ºC, with gentle skin handling to avoid excessive extraction of tannins. Once the alcoholic fermentation is complete, the wine is quickly racked, avoiding an overload of tannins and ensuring a finer, more balanced texture.
After malolactic fermentation, which softens the wine's acidity, the Hacienda Albae Diablar Syrah is aged in 225-liter French oak barrels. This aging process helps refine the tannins and gives a greater aromatic complexity, with notes of ripe fruit, spices, and a subtle hint of wood. The high natural acidity of Syrah gives this wine excellent aging potential, maintaining its freshness and structure over time.
