The Organic Red Wine Pago Finca Élez, Nostrum, represents the essence of the Mediterranean character that defines our estate. This exceptional wine is made from the Cencibel and Syrah varieties, which blend perfectly in our unique soil. Each year, we carefully select the ideal proportions of these grapes to achieve a fresh and fruity wine style, with aromas that reflect the identity of our estate.

Nostrum is a true expression of terroir, highlighting the Cencibel variety in the blend for its freshness and distinctive aromas of red fruits and fennel. In the mouth, this wine is fresh, with elegant tannins and a well-defined structure. The Syrah brings complexity and soft tannins, complementing perfectly the character of the Cencibel.

Regarding its production, each plot and variety is treated separately to ensure maximum quality. After a cold pre-fermentative maceration for 4 days at 14°C for greater aroma extraction, fermentation takes place for 21 days at a controlled temperature below 25°C. Subsequently, a post-fermentative maceration is carried out to fix the color and aromas.

Malolactic fermentation takes place in French oak vats and 5000-liter concrete tanks, adding complexity and smoothness to the wine. Nostrum ages for 10 months in 500-liter French oak barrels, selected from old vines and la Tiná, known for their location in dolomitic limestone bedrock at an altitude of around 1000 meters.
