The PURE The Winery red wine is a zero sugar wine with 10.5% alcohol, made from Barbera and Merlot grape varieties in Calamandra, Piedmont in northern Italy.

PURE wines are vegan. An achievement to be able to certify that their wines have a production totally free of animal products. The low sulfite content is the result of natural winemaking, as the absence of sugars requires a lower level of sulfite for antioxidant purposes.

Winemaking process

The grapes are cared for throughout the year so that at harvest the balance between ripeness and acidity is found. During fermentation, the must is in contact with the skins, then it is separated and placed in another tank with yeasts and at a controlled temperature. During the whole process, the skins are again in contact with the wine to favor the extraction of flavonoids and the oxygenation of the yeast, so that the residual sugar disappears completely. After the first fermentation, the wine finishes refining on the lees for malolactic fermentation to take place.
