Sierra Cantabria Selección is a single varietal of Tempranillo. The production of Sierra Cantabria Selección begins with manual harvesting and a double selection, one in the vineyard and another in the cellar. Once in the cellar, the must ferments for 2 days with selected yeasts at 27ºC. Subsequently, a maceration process lasting 17 days takes place.
To finish the production process, Sierra Cantabria Selección ages for 6 months in a tank and for another 6 months in American and French oak barrels.
Sierra Cantabria Selección is ideal to accompany cured meats, rice dishes, pasta, legumes, potatoes, white and red meats roasted or grilled, and lightly seasoned stews. It is recommended to serve at a temperature between 12 and 14ºC.
