Production and aging

La Vendimia is a blend of the Tempranillo and Garnacha Tinta varieties. For its production, the grapes are destemmed and undergo partial carbonic maceration. Subsequently, the must ferments for 20 days in stainless steel tanks with periodic pump-overs. After fermentation, Palacios Remondo La Vendimia ages for 5 months in wooden vats and French oak barrels.
