Williams & Humbert Wineries, presents us with Vermouth Canasta, originating from Jerez (Spain). It is made from the grape varieties Palomino and Pedro Ximénez.
The Vermouth Canasta is macerated for several weeks in large stainless steel containers, so that the ingredients integrate and release their aromas and flavors. Once maceration is complete, a small amount of distilled alcohol is added to stop the fermentation process and preserve the blend. It is then filtered and a bit of sugar is added, giving it a sweet touch and balancing its bitter taste. Finally, the Vermouth Canasta is bottled and left to rest for a while before distribution. The result is a dark amber-colored drink, with a bittersweet flavor and herbal, spicy, and citrus notes.
William & Humbert Wineries is a winery in Jerez founded in 1877 by Sir Alexander Williams and Arthur Humbert. They began exporting their wines to England, becoming one of the leading exporters of Jerez wines. The winery has remained in the hands of the Williams family since its founding, currently led by the fifth generation.
The winery uses traditional production methods common in the making of Jerez wines, such as the solera and criadera system. They have also innovated in the production of sweet wines, like Pedro Ximénez, by freezing the grapes before pressing.
Another point of differentiation for this winery is its extensive underground caves system, spanning over 15 kilometers, providing optimal conditions for aging their wines.
The winery is also known for its spirits, such as the Gran Duque de Alba brandy and Rives gin, as well as their efforts in sustainability, including solar energy implementation and responsible waste management.
