Production and aging
Blanco Nieva is a young wine without aging, made from 100% Verdejo grapes in the Nieva region, in Segovia.
The wine is made after a rigorous selection of the finest and most elegant must. It is made with grapes from old vines in goblet shape (20%) and vineyards with over 15 years of age (80%).
The maceration is carried out in cold with 30% of the grapes, static clarification, fermentation at 15ºC in stainless steel tanks for 23 days, rest on lees, clarification, stabilization at -4ºC and filtration.
Tasting notes of Blanco Nieva
- Appearance: Blanco Nieva is pale straw yellow with highly developed greenish hues.
- Nose: aromas of white flowers and fresh fruit (peach).
- Palate: good acidity, balanced, fruity and tasty. Very fresh with excellent vitality. A treat.
Pairing
Blanco Nieva is ideal to accompany appetizers, fish, seafood, and even roast suckling pig in the Segovian style.
It is recommended to consume at a temperature between 8-10ºC. Keep in an ice bucket during consumption to maintain the ideal temperature.
