Description

Like all good coffees, this Mexico 'Chiapas' has a great story behind it. The production of this specialty coffee is carried out entirely by a cooperative of 212 women from the Sierra and Frailesca regions in the southern state of Chiapas. The situation of inequality faced by women in these areas, which are markedly rural, makes them economically and socially vulnerable, so this type of initiative represents a great opportunity to eliminate these differences and reverse this situation.

These women are not only in charge of harvesting the coffee, which is done manually and selectively (grain by grain, choosing those that are really ripe), but they also carry out the integral process, including the marketing of the product. This allows greater control of the process and its traceability, in addition to guaranteeing a very high quality of the product, which translates into its 85 points in SCA cupping.

Mexican coffees stand out, in addition to their quality, for their wide range of notes and profiles, favored by the varied microclimates and seasonal rains that occur in these latitudes. This coffee is more specifically produced in the state of Chiapas, a rugged region bordering Guatemala to the south where coffee is more than just a beverage for its inhabitants. Thus, these beans, which grow under the shade of the natural forests of the area, are harvested during the months of December to March, at an altitude ranging from 1,100 meters above sea level to 1,500.

In this coffee you can find beans of up to 5 different varietals, all of them 100% Arabica: Bourbon, Typica, Sarchimor, Caturra and Catuaí. This makes it a coffee rich in nuances, with a very marked sweet profile. These beans, once manually harvested, are subjected to a natural washing and drying process, where through a natural fermentation process the mucilage is separated from the bean, resulting in beans of an intense brown color
