The wine Aalto, from the Ribera del Duero Denomination of Origin, is produced by Bodegas Aalto under the direction of Mariano García and Javier Zaccagnini. Since its inception in 1999, this single-varietal Tinto Fino has redefined the standards of Spanish viticulture, through a selection of vineyards aged 40 to 80 years. The grapes, hand-picked, come from diverse soils that provide a unique complexity to the wine. The fermentation of the parcels is carried out separately in suitable containers, followed by aging for 16 to 17 months in oak barrels, which integrates the wood with the fruity flavor. Aalto is characterized by concentration, freshness, and silkiness, evolving favorably over time. The tasting note reveals a fruity aroma with spicy and fine wood notes. On the palate, retro-nasal notes of licorice and tobacco are perceived. It is recommended to serve at 16-18°C, decanting before consumption. Ideal to accompany roasted red meats, lamb, and aged cheeses.
